This week, in the spirit of Valentine’s Day, I decided to bake!
Do you ever feel like making something but find that every recipe you review uses ingredients you don’t have or requires steps you don’t feel like taking?
I frequently have this problem.
It’s hard for me to follow a recipe because the process doesn’t resonate with me.
Well, I was grocery shopping today and at checkout, I realized I needed chocolate chips.
Because Valentine’s Day is tomorrow.
And everything should be covered in chocolate for Valentine’s Day.
I ran back to grab some and impulsively added shredded coconut to my cart too.
Because in that moment, chocolate covered macaroons sounded delicious.
Well, when I got home, I started looking up recipes.
But I didn’t feel like making any of them.
At least not the way they were written.
Plus, I had sweetened coconut flakes and most of the recipes required unsweetened coconut.
So I decided to do my own thing.


I used the recipes I had reviewed for inspiration.
And popped my “chocolate covered macaroons” in the oven before rushing off to bring my oldest son to guitar practice.


I left someone else in charge of the baking.
Normally, my random improvisations in the kitchen work out pretty well.
But this was a total flop.
Maybe I should have greased the silicone pan.
Maybe they needed to bake a few minutes longer.
Maybe I should have followed a recipe…
Sometimes I win; sometimes I lose.
