This week, I finally made fish tacos.
I say “finally” because my husband has been asking for this meal for weeks, but I haven’t had all the ingredients in the house at the same time until now.
JM specifically requested fried fish tacos with spicy tartar sauce and coleslaw.
Putting all that on a taco didn’t make sense to me, so I skipped the tartar sauce (which disappointed everyone).
I envisioned the coleslaw on top of the tacos.
My family wanted it on the side.
*sigh*
It’s challenging to please everyone.
But at least everyone agreed that the coleslaw was delicious!

The Coleslaw
As usual, I didn’t really follow a “recipe,” but here’s what I used:
- 1 bag coleslaw mix
- 2 limes
- Low fat mayonnaise (just because it was in the fridge – full fat would have been fine)
- Pickled jalapenos
- Red onion
- Cilantro
- Old Bay seasoning
- Salt and pepper
I mixed everything together in a bowl except the mayonnaise and then gradually added a little mayo at a time until I reached the desired creaminess.
I think I’d add even more spiciness next time!
I breaded and fried some tilapia and assembled the tacos, and I made some French fries for the kids (tossed with salt and Old Bay seasoning).
Yum. Double yum.
