Meal Prepping When You Don’t Wanna

This week, I was definitely feeling unenthusiastic about meal prepping.

The whiniest voice in my head was just saying, “I don’t wannnaaaa.”

I blame the weather in my area. The sunshine and warm temperatures have been replaced by gray skies and damp, chilly air.

In any event, I plunged forward, and this is what I made:

Lentil-Beef Taco Bowls

Pork chops with mashed potatoes and green beans

Overnight steel cut oats

Greek jar salads with beets

Roasted potato, zucchini, and mushroom hash

Tofu pudding parfaits (with granola)

Rice pudding

Then, a few days later, I DID feel motivated – to clean out random odds and ends in my pantry. So I added the following items to our stash of food for the week:

Peanut butter fluff oat bars

Sheet pan pancakes (half “chunky monkey” and half sprinkes)

Molasses cookies

Pumpkin molasses bread

I ended up feeling pretty blah mid-week, so I was very glad that I had prepped some of these items. I definitely would not have had the motivation to make them later in the week!

I also commissioned my eldest son to make the tuna for their end-of-week lunches, and we pulled out some frozen burgers for dinner one evening. 

Finally, I was inspired to make a few additional items when a family from my old church had a baby; I doubled the recipes to make a meal for them – and extras for us!

Whenever I bring food to a new mom, I like to include some easy snacks as well as a main course. Muffins and other handheld items are essential, in my opinion, when you’re a nursing mom!

No one in my family minded having some extra baked goods either.

How do you get motivated to meal prep when you’re just not feeling it?
