Cooking Your Way to a Dinner Plan

This week, I stumbled my way into an awesome dinner plan.

Ever have one of those days where evening plans unexpectedly get cancelled or you just had no preconceived idea for dinner?

We had one of those weird weeks where every hour was scheduled – until one event/activity after another got cancelled for one reason or another.

Thus, Saturday evening, I had to come up with dinner on the fly – for us and two family members who ended up joining us.

The results were unexpectedly awesome!

The Process

I started out with a jar of tikka masala sauce that I thawed from the freezer. But then it accidentally got dumped out…

Originally I was thinking of making a cauliflower and broccoli tikka masala over brown rice, so I continued roasting the vegetables and started the brown rice in the rice cooker.

I figured I could add tofu to the vegetables to bulk things up, and as I was pulling the tofu out of the fridge, I found a half bag of baby carrots that needed to be used too. I tossed both of those items in the oven to roast too.

While I continued prepping these ingredients, I remembered that I had a couple pounds of sweet potatoes that were starting to sprout.

So I cut those into half moons and added those to the oven.

It was then that the plan came together!

I had the makings of some awesome Buddha bowls.

I whipped up a tahini and lemon sauce, chopped some almonds, and put out a couple spice mixes (garlic herb seasoning, everything but the bagel seasoning, etc).

I diced some tomatoes and cucumbers, tossed them with a little vinegar and olive oil, and put out all the fixings.

Everyone was able to create their own bowls, and I found everything delicious! Of course, I added a little sriracha to mine because spice is life.
