I watched my nieces and nephew for a few hours and cleaned out a bunch of miscellaneous ingredients left in the fridge to throw my own lunch together in the process.
The end result was a pretty delicious salad – proof that you can always eat your vegetables!
Dump-the-fridge Salad

Ingredients
- Yellowing arugula
- One cucumber
- Leftover shredded chicken
- Gluten-free pita bread
- Roasted beets
- Goat cheese
- Dressing: olive oil, red wine vinegar, Greek seasoning, salt and pepper
This salad would have been even more tasty with tomatoes, bell peppers, some olives, and spicy pepperoncini peppers. You could easily swap the protein, make it vegan with chickpeas or white beans, add or subtract vegetables, or use feta instead of goat cheese.
