Freezer Clean-out Smoothie Bowl

This week, I need to make a smoothie bowl in a pinch.

I have been obsessed with smoothie bowls for several months now.

I’m not sure what it is about these.

I’ve been enjoying smoothies regularly for many years but these are so much more satisfying with the added crunch and texture from the toppings.

Joy and I have another joint blog post coming in the near future with several of the smoothie bowl recipes we make regularly, but this week, my freezer was pretty bare.

But A was in the mood for a smoothie bowl (since I got him hooked now too), so I pulled together a pretty tasty freezer clean-out bowl!

Ingredients
  • About a banana and a half (frozen)
  • About 4 oz frozen ripe jackfruit
  • About 4 oz frozen pineapple chunks
  • 3-4 frozen beet stems
  • Unsweetened coconut milk, to blend (maybe 1 cup total)

I simply combined all these ingredients in my ninja prep blender and pulsed until super smooth and creamy. I just add a little liquid at a time so that the smoothie stays thicker than usual.

Toppings

The possibilities for toppings are pretty endless, and I typically use whatever I have on hand for my smoothie bowls too.

  • Granola
  • Unsweetened shredded coconut
  • Chia seeds
  • More frozen pineapple chunks (fresh fruit is better)
