This week, I’m reflecting on how quickly time flies.
It seems like I blinked and July disappeared. And most of August too.
In the whirlwind of last-minute summer activities and outings – hiking Mt. Mondanock, backyard camping, and paddleboarding with friends! – I definitely dropped the ball on actually photographing and documenting my “Back to Balance” challenge.

However, I have done a decent job sticking with my resolution to balance eating and at least achieving maintenance. As I buckled down on meal planning in preparation for the start of the fall semester, I managed to drop another pound too.






But what’s most important to me is always the food. Must be nutritious. Must be delicious. Must be satisfying. And sometimes it’s even beautiful.
