This week is all about the insane amounts of zucchini coming out of my garden.
Our zucchini plants have exploded. I think these are dinosaur zucchini plants.
I have gardened many, many times before. I have had successful zucchini crops. But I have never seen zucchini plants like these.
While the plant is amazing, the even more awesome part is how many zucchini we are harvesting. It seems like every other day, A sends me a photo of a pile of zucchini (plus tomatoes and cucumbers – we are getting a lot of those too!).

There are tons of recipes for zucchini. Zucchini parmesan, zucchini fritters, zucchini quiches, zucchini bites, zucchini fries, zucchini “noodles” in a variety of sauces, and of course the inevitable variety of zucchini breads.
I recently stumbled upon a savory zucchini bread recipe that I do plan to try at some point.
But as I shared the other day, Joy made this delicious Greek spiralized zucchini salad and I had to try to replicate it. Of course none of us measure or write down our process or follow published recipes exactly, so replication is a real problem.
I did my best though, and the salad was still delicious (even if hers was definitely better).
Greek Spiralized Zucchini Salad

Ingredients
- Zucchini (2-3 medium), spiralized
- 1 bell pepper, diced
- 2 medium-large tomatoes or about 1 cup cherry tomatoes, diced or halved depending on the size
- 1/2 small red onion, diced
- Roughly 1/4-1/2 cup kalamata olives, sliced
- Roughly 1/4-1/2 cup pepperoncini peppers, sliced
- Other add-ins: Greek seasoning, artichoke hearts, roasted red peppers, cucumbers, etc.
- Lemon
- Olive oil
I combined all the ingredients in a large bowl and drizzled with a slight amount of olive oil and the juice from one large lemon. I then sprinkled oregano, salt, and black pepper over the top.
I would have loved to add a true Greek seasoning blend, but I didn’t have one.
The result was still so tasty that I finished the entire salad in two servings. And didn’t share one bite.
