Last week completely fell apart. Things were chaotic, we did hours and hours of yardwork, the daily temperatures averaged in the 90s, and we had two big celebrations.
So needless to say, I tracked nothing, barely paid attention to what I actually ate, and consumed a variety of frozen treats.
Of course I also had two days over 30,000 steps where I sweat out more liquid than I could possibly intake.
We celebrated our new home with a fantastic housewarming party and then Joy, Robyn, and I hosted our second annual “Christmas in July” for the kids.

I failed abysmally at taking pictures at both events, so sadly this will be a very bland post.
Christmas in July
July 25th is the perfect day to celebrate Christmas in July. This is a real make-it-your-own event.
Last year we painted glue-and-salt snowflakes, had a “snowball” fight with water balloons, and ate lots of red and green foods.
This year, we were looking for an excuse to make a bunch of fried food, so somehow Christmas in July turned into fried Christmas.
The menu:
- Fried dough (regular and gluten free)
- Fried zucchini and summer squash
- Fried chicken nuggets (made with chickpea flour)
- Fried shrimp (regular and spicy, also tempura battered with chickpea flour)
- French fries
- Mini gluten-free cinnamon sugar donuts
- Fried gluten-free oreos

We planned to fry kale chips as well but we ran out of steam.
We did eat some vegetables alongside the fry-smorgasbord. Crudite with homemade vegan ranch.
And a bunch of awesome dips to go with our fried things:
- Spicy kimchi dip
- Truffle aioli
- Cilantro lime sauce
- Ketchup
- Powdered sugar for the fried Oreos

And I am so tired now from the chaos of the last two weeks that I will sign off with a promise to provide better updates at my next attempt at my SMART goal – this week.
The one food highlight from this week was definitely this Greek spiralized zucchini salad that Joy made at the beginning of the week and I attempted to replicate later on; spoiler, hers was way better.
